Henri Gault was a French food journalist. He was co-founder of the Gault Millau guides with Christian Millau, and invented the phrase "nouvelle cuisine", though later he claimed to regret it.

Willie James Gault is an American former NFL wide receiver and potential Olympic athlete. He played in the National Football League for 11 seasons for the Chicago Bears and Los Angeles Raiders. Considered one of the fastest NFL players of all-time, Gault was a member of the Bears team that won Super Bowl XX, and was also a member of the U.S. Olympic team that boycotted the 1980 Olympics.

The Hon. Matthew Hamilton Gault M.P., J.P. was an Irish-Canadian financier and politician. In 1865, he founded Sun Life Financial at Montreal, Canada East. He was elected to the House of Commons of Canada in the 1878 election for the riding of Montreal West. A Conservative, he was re-elected in 1882 and served until his death in 1887. During the winter he lived with his family at Braehead in Montreal's Golden Square Mile. He was the brother of Andrew Frederick Gault and the uncle of Brigadier-General Andrew Hamilton Gault.
