Urquidy signed with the Astros as an international free agent in 2015 under the name of Jose Luis Hernandez, and was known as such until before the start of the 2019 season. He made his major league debut in July 2019.

On April 8, 2015, at 20 years of age he became the youngest pitcher to appear in a game for the organization, and the first player born in 1995 to play in Major League Baseball. In 2017 he was an American League All Star. In 2018 he was suspended for 75 games for violating the league's policy on domestic assault. In 2019 he led the American League with 38 saves.
